How to Understand the Freshness of an Egg?
1-Day-Old Egg
When a 1-day-old egg is cracked, the shape of the yolk is round and regular. There will be a ring of transparent egg white around it, and around that, a thinner ring of egg white. When placed in water, the egg does not float; it sinks to the bottom.
1-Week-Old Egg
The yolk of the egg is still regular. The transparent egg white around it spreads a little more but is still round in shape. Since the air pocket inside has grown, when placed in water, the blunt end of the egg rises upwards.
2-3-Week-Old Egg
The yolk loses its round shape and begins to flatten slightly. The white part around it becomes watery and spreads when cracked. Such an egg should be cooked very well before eating. When placed in water, the blunt end rises toward the water's surface.
